There's isn't a way to put the status of a job back to an earlier status. What most companies do in this case is cancel the job and then create a new one for the new appointment.
You can create a new one easily using the same details by clicking the three dots menu next to the job and then selecting copy job. Or from within the job click the copy job icon.
Alternatively you could keep the original job but add a note to one of the fields i.e., job description saying the appointment has been cancelled.
