There's different ways you can do it, probably the easiest way is to add multiple fields to the work done checksheet such as Monday work, Tuesday work, Wednesday work etc.
Your engineers can then update the work done on Monday and fill in Monday's fields and leave the job open. On Tuesday they can go back into the job again, click the plus button (iOS) or Okappy icon (Android) and then Add work done sheet to bring up the work done sheet. They can then add Tuesday and so on.
